{"id":17520,"date":"2022-01-14T16:21:16","date_gmt":"2022-01-14T15:21:16","guid":{"rendered":"https:\/\/bio4dreams.com\/hiweiss-isolati-proteici-testurizzati-vegetali\/"},"modified":"2024-05-30T17:47:33","modified_gmt":"2024-05-30T15:47:33","slug":"hiweiss-vegetable-protein-isolates-texturized","status":"publish","type":"post","link":"https:\/\/bio4dreams.com\/en\/hiweiss-vegetable-protein-isolates-texturized\/","title":{"rendered":"HiWeiss: eco-friendly vegetable protein isolates and texturized soy"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\" id=\"un-presente-difficile-da-digerire\">A difficult present to digest<\/h2>\n\n\n\n<p>According to a study published in March 2021 in <em>Nature Food<\/em>, the <strong>food industry is responsible for over a third of greenhouse gas emissions<\/strong>.<sup>1<\/sup> The main culprits are intensive livestock farming, particularly cattle farming: producing one kilogram of meat results in the emission of 60 kilograms of CO<sub>2<\/sub>.<sup>2<\/sup><\/p>\n\n\n\n<p>Reducing the number of farms seems like the obvious choice, but it&#8217;s hardly feasible: beyond direct meat consumption, <strong>animal proteins are used as supplements, thickeners, and emulsifiers<\/strong> in numerous industrial processes, and according to estimates by the United Nations Food and Agriculture Organization (FAO), <strong>global food production<\/strong> needs to <strong>increase by 50% by 2050<\/strong> to support population growth.<sup>3<\/sup><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"proteine-vegetali-una-nuova-risorsa\">Vegetable proteins: a new resource<\/h2>\n\n\n\n<p>An alternative can be the <strong>use of vegetable proteins instead of animal proteins<\/strong>.<\/p>\n\n\n\n<p><strong>Take soy, for example<\/strong>. Its seeds are composed of about half <strong>proteins, very similar to animal proteins in characteristics and functional properties<\/strong>\u2014key chemical-physical aspects in the preparation and conservation of food at an industrial level.<\/p>\n\n\n\n<p>The production of these proteins has a lower environmental impact compared to those of animal origin, especially if conducted through <strong>conservative farming practices<\/strong>, a cultivation system promoted by the FAO that allows for reduced CO<sub>2<\/sub> production and other climate-altering gases.<\/p>\n\n\n\n<p>However, today, <strong>the processes to obtain vegetable protein isolates &#8220;dirty&#8221; the functional qualities of the proteins themselves<\/strong>; consequently, further industrial processing is needed to &#8220;clean&#8221; them, which increases costs and energy consumption. At the same time, the <strong>raw materials from which they are extracted<\/strong>\u2014such as soy\u2014<strong>are not obtained through conservative agriculture<\/strong>. It&#8217;s back to square one.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"l-innovazione-di-hiweiss\">HiWeiss&#8217;s innovation<\/h2>\n\n\n\n<p>HiWeiss, a startup founded in 2018, has developed <strong>an innovative process capable of isolating plant proteins without altering them<\/strong>, preserving their <strong>nutritional values<\/strong> and <strong>functional properties<\/strong>. The product obtained is a pure and standardized vegetable protein source, ready for use in the food industry.<\/p>\n\n\n\n<p>HiWeiss&#8217;s process, in addition to <strong>soybean <\/strong>seeds, is also applicable to <strong>pea <\/strong>and <strong>lentil <\/strong>seeds, <strong>corn <\/strong>germ, and <strong>alfalfa<\/strong>.<\/p>\n\n\n\n<p>Moreover, from the plant protein isolates, <strong>the startup has also developed an innovative moist texturized soy<\/strong>. This is an aggregate that gives &#8220;form&#8221; to the proteins, <strong>making them directly usable as meat substitutes in food preparation<\/strong>, with a low impact on production costs.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"una-filosofia-sostenibile-messa-in-campo\">A sustainable philosophy in practice<\/h3>\n\n\n\n<p>For HiWeiss, conservative agriculture is not just a principle to claim, but an integral part of its philosophy, which it practices. Indeed, <strong>for years the startup has used non-GMO raw materials grown in conservative agriculture<\/strong>, all <strong>transparently and traceably<\/strong>.<\/p>\n\n\n\n<p>HiWeiss aims to have <strong>zero impact on the environment<\/strong>, or even a positive one. In this sense, the startup positions itself as a potential contact point for companies interested in developing supply chains for sustainable plant sources.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"hiweiss-oggi\">HiWeiss Today<\/h2>\n\n\n\n<p>In December 2020, HiWeiss filed an international patent application for its innovative process of extraction and isolation of plant proteins at the <strong><em>World Intellectual Property Organization<\/em><\/strong> (WIPO).<\/p>\n\n\n\n<p>By the end of 2022, <strong>the industrial site will be operational<\/strong>, where HiWeiss plant protein isolates and concentrates will be produced for the market.<\/p>\n\n\n\n<p>HiWeiss, along with the FAO and 26 other partners, <strong>is part of the European Horizon 2020 project <a href=\"https:\/\/cordis.europa.eu\/project\/id\/101000622\/it\">RADIANT<\/a><\/strong> (ReAlising DynamIc vAlue chaiNs for underuTilised crops), which aims to develop solutions and tools to promote currently underused crops through dynamic agricultural production and processing chains.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p><em>From
